Today weather in my country is rainy and when it rains I love to drink or eat something with cinnamon. So, I decide to do one of my favorite cake, Cinnamon carrot cake. It is easy and very yummy! ^_^
1 cup sugar
half cup corn oil
half cup milk
1 big grated carrot (if carrot is small use 2 small carrots)
1 teaspoon cinnamon
2.5 cups flour
1 Vanilla extract
1 Baking powder
1. Preheat oven to 150 degrees. In a bowl, whisk together flour, baking powder and vanilla extract. Set aside.
2. In another bowl, with an electric mixer, beat eggs and sugar until light and fluffy. Then add oil, milk, cinnamon,carrot and combined it. With mixer on low speed, gradually add flour mixture and beat just until combined.
3. Bake at 150 degrees for 30 to 35 minutes.
P.S: Remove the water of grated carrot squeezing with your hands. otherwise inside of cake will be uncooked.
